Gritted Cornbread

Ingredients:

  • 5-6 ears of fresh corn, grated (about 1 1/2 cups)
  • 1/3 cup yellow cornmeal mix (or just cornmeal)
  • Heaping tablespoon of self-rising flour
  • Heaping tablespoon of sugar
  • Heaping tablespoon of sour cream
  • 1 egg
  • 1/2 teaspoon baking powder
  • 1/2 teaspoon baking soda
  • 1/4 teaspoon salt
  • 1 tablespoon oil
  • 1 tablespoon butter

Instructions:

  1. Prepare the Gritted Cornbread Batter:
    • In a mixing bowl, blend the freshly grated corn, yellow cornmeal mix (or just cornmeal), self-rising flour, sugar, sour cream, egg, baking powder, baking soda, and salt until all elements are fully incorporated.
  2. Preheat and Grease:
    • Heat your oven to 350 degrees. Grease an 8-inch iron skillet with 1 tablespoon of oil and 1 tablespoon of butter.
  3. Transfer and Bake:
    • Transfer the cornbread mixture into the preheated and greased skillet. Bake in the oven for 25-30 minutes, adjusting as needed to achieve a golden-brown perfection.
  4. Serve Warm:
    • Allow the Gritted Cornbread to cool slightly before slicing. Serving it warm ensures the full enjoyment of its comforting and wholesome taste.

Tips:

  • For a heartier texture, consider using only cornmeal.
