Mom's Green Jello Salad

Ingredients:

  • 1 lb. cottage cheese (Hood's Country Style recommended)
  • 1 (20 ounce) can crushed pineapple
  • 2 (3 ounce) packages lime Jell-O gelatin

Directions:

  1. Prepare Ingredients:
    • Drain the crushed pineapple well, saving the juice.
  2. Prepare Jello Mixture:
    • Mix the lime Jell-O according to the package directions, using all of the pineapple juice as the liquid. Add enough water, if needed, to reach the specified liquid amount.
  3. Partial Setting:
    • Place the Jello mixture in the refrigerator until it is partially set.
  4. Incorporate Cottage Cheese and Pineapple:
    • Mix in the cottage cheese and drained crushed pineapple.
  5. Mold or Dish:
    • Transfer the mixture into a mold or a pretty dish.
  6. Refrigerate:
    • Refrigerate until the salad is firm.
