Kopytka potato dumplings

Ingredients:

  • 1 lb. boiled and mashed potatoes (unseasoned)
  • 1 cup all-purpose flour
  • 1 tsp salt
  • 1 egg
  • Melted butter, for drizzling
  • Fried bacon pieces and sautéed onions, for serving

Instructions:

  1. Prepare the Dough:
    • Boil and mash 1 lb. of potatoes, ensuring they are unseasoned. Let them cool slightly.
    • In a large bowl, combine the mashed potatoes with 1 cup of all-purpose flour, 1 tsp of salt, and 1 egg.
  2. Shape the Dumplings:
    • Cut the dough into four pieces and roll each piece into a rope.
    • Cut the ropes into diagonal pieces, creating small dumplings.
  3. Cook the Kopytka:
    • Drop the dumplings into lightly simmered water. Once they float to the surface, let them cook for an additional 2 minutes.
  4. Drain and Serve:
    • Gently drain the cooked dumplings and arrange them on a serving dish.
  5. Toppings:
    • Drizzle the Kopytka with melted butter, and generously sprinkle fried bacon pieces and sautéed onions on top.
  6. Enjoy:
