Chicago Public School Peanut Butter Cookies
Ingredients:
- 1 1/4 pounds (5 sticks) softened butter
- 2 1/2 cups granulated sugar
- 1 3/4 cups packed brown sugar
- 1 pound peanut butter
- 3 eggs
- 5 1/2 cups all-purpose flour
- 1/2 teaspoon baking soda
- 3/4 teaspoon salt
Instructions:
- Preheat Oven:
- Preheat your oven to 375 degrees F.
- Prepare the Dough:
- In a large bowl of an electric mixer, beat the softened butter until light and fluffy (approximately 3 minutes).
- Add both granulated and brown sugars, and mix until there are no granules left (about 5 minutes).
- Add the peanut butter and mix until well combined.
- Incorporate the eggs, continuing to beat on high speed for an additional minute.
- Combine Dry Ingredients:
- In a separate large bowl, combine the all-purpose flour, baking soda, and salt.
- Mix the Dough:
- Slowly add the flour mixture to the butter mixture, stirring until the ingredients are well-blended.
- Form Cookies:
- Drop heaping tablespoonsful of dough onto greased baking sheets.
- Flatten the dough with the palm of your hand to form 3-inch circles that are 1/4 inch thick.
- Bake:
- Bake the cookies for 10 to 12 minutes or until they are lightly browned on the bottom.
- Enjoy:
- Allow the cookies to cool on the baking sheets for a few minutes before transferring them to a wire rack to cool completely.
