Simple Coq au Vin-inspired Chicken
Ingredients:
- 1/2 small onion, sliced thick
- 2 to 4 small mushrooms or 2 medium mushrooms, whole or cut
- 1 chicken leg quarter or 1 chicken breast
- 1 garlic clove
- Salt and pepper, to taste
- Water or chicken broth, as needed
Instructions:
- Place the sliced onion and mushrooms at the bottom of a slow cooker.
- Lay the chicken leg quarter or breast on top of the vegetables.
- Add a garlic clove to the mix.
- Season with salt and pepper to your liking.
- If needed, add water or chicken broth instead of wine to cover the ingredients.
- Set the slow cooker on low for 4-6 hours or high for 2-3 hours, cooking until the meat reaches the desired tenderness.
