German Potato Noodles with Bacon and Onions
These German Potato Noodles, also known as "Kartoffelknödel," are a comforting dish that combines mashed potatoes with simple ingredients to create delightful noodle-like dumplings. Tossed with crispy bacon and sautéed onions, they make for a hearty and flavorful meal.
Ingredients:
- 2 cups mashed potatoes
- 2 eggs
- 2-3 cups flour
- 3/4 teaspoon salt
- 1/4 teaspoon nutmeg
- 2 large potatoes (for boiling, or use leftover mashed potatoes)
- 2 teaspoons butter
- 2-3 strips of bacon, cut up
- 1/2 cup diced onions
Instructions:
- Prepare Potatoes:
- Boil 2 large potatoes in their jackets until soft. Alternatively, use leftover mashed potatoes.
- Cool and peel the potatoes.
- Mash potatoes with a mixer or put them through a ricer.
- Prepare Dough:
- In a large mixing bowl, combine mashed potatoes, eggs, flour, salt, and nutmeg.
- Mix into a stiff dough.
- Shape and Cook Noodles:
