Turnip Green Soup
Prepare a delicious and hearty Turnip Green Soup for a quick and satisfying Wednesday dinner. This recipe combines cajun smoked sausage, nutritious turnip greens, and flavorful beans for a comforting meal.
Ingredients:
- 1 lb. cajun smoked sausage (sliced into rounds or crumbled, browned, and partially drained)
- 1 medium yellow onion, chopped
- 1 envelope Knorr Vegetable Recipe Mix
- 1 28oz (1 lb, 12oz) bag frozen Pictsweet Chopped Turnip Greens with Diced Turnips (or equivalent in smaller bagged portions)
- 3.5 to 4 cups chicken broth (adjusted for desired soupiness, using Better Than Bouillon)
- 2 cans great northern beans (drained)
- 1 can black beans (drained & rinsed)
Instructions:
- Brown Sausage:
- In a Dutch oven, brown the cajun smoked sausage. Set aside, leaving some grease in the pot.
- Cook Onion:
- Cook the chopped onion in the remaining grease until translucent.
- Combine Ingredients:
- Return the sausage to the pot with the onion.
- Add Knorr Vegetable Recipe Mix, frozen turnip greens with diced turnips, chicken broth, great northern beans, and black beans.
- Gently stir to combine.
- Simmer:
- Bring the mixture to a simmer, then reduce heat to medium-low.
- Cover the pot with a lid, leaving it partially cracked.
- Allow it to slow simmer for 2 hours.
- Serve:
- Serve the Turnip Green Soup hot and enjoy its rich flavors.
- Pair it with hot, buttered, buttermilk cornbread for a perfect accompaniment.
