This Mac & Cheese recipe holds a special place in my heart as it's a cherished gift from my grandma, hailing from Aberdeen, Scotland. Ingredients:

  • 900g bag of pasta
  • 3-4 cups of cheese (combination of old/aged cheddar, mozzarella, fruilano, and Parmesan)
  • Milk (enough to cover the noodles)
  • Optional: Heavy cream (for extra richness)
  • Optional: Pats of butter
  • Optional toppings: Bread crumbs, tomatoes, bacon

Instructions:

  1. Preparation: Preheat the oven to 350°F (176°C).
  2. Boil the Pasta: Parboil the pasta for 5-7 minutes. It should be slightly undercooked as it will continue cooking in the oven. Drain the pasta.
  3. Cheese Blend: Grate the aged cheddar, mozzarella, fruilano, and Parmesan. In a bowl, mix the grated cheese with the slightly cooled pasta, ensuring an even distribution.
  4. Assemble and Add Milk: Transfer the cheesy pasta mixture to a baking dish. Pour milk over it until you can see the milk through the noodles. For added richness, consider using a mix of milk and heavy cream. Add pats of butter if desired.
