Walnut and Cheese Sables

Ingredients:

  • 1/2 cup plain flour
  • 1/2 cup self-rising flour
  • Salt and coarse black pepper, to taste
  • 1/4 teaspoon chili powder
  • 2 oz butter, room temperature
  • 1 1/2 cups grated cheddar cheese
  • 1/2 cup finely chopped walnuts
  • 3 tablespoons milk

Instructions:

  1. Prepare Dry Ingredients:
    • Sift together plain flour, self-rising flour, salt, black pepper, and chili powder.
  2. Incorporate Butter:
    • Rub in the butter until the mixture resembles breadcrumbs.
  3. Add Cheese and Walnuts:
    • Stir in the grated cheddar cheese and finely chopped walnuts, ensuring an even distribution.
  4. Form Dough:
    • Add the milk and mix until it forms a stiff dough.
  5. Chill and Shape:
    • Chill the dough for 30 minutes.
    • Roll the chilled dough into a small log on a floured board.
    • Cut into 1/4-inch rounds.
  6. Bake:
    • Place the rounds on a greased baking tray or lined with greaseproof paper.
    • Bake in a preheated oven at 180°C/350°F for approximately 14-15 minutes or until slightly brown.
  7. Cool and Serve:
    • Allow the sables to cool before serving.

Tips:

  • For a richer flavor, consider using aged cheddar cheese.
  • Experiment with different types of nuts for a unique twist.
