Kabobs:
- Chicken

- Bell pepper
- Pineapple
Chicken Marinade:
- Ketchup
- Brown sugar
- Soy sauce
- Pineapple juice
- Apple cider vinegar (ACV)
- Ginger
- Oil
Rice:
- Garlic
- Bell peppers
- Cold cooked rice
- Eggs
- Ham
- Diced pineapple
- Oil
Bacon-Wrapped Pineapple:
- Canned pineapple
- Bacon strips
- Brown sugar
Drink:
- Malibu
- Coconut cream
- Half a lime
- Rose’s lime juice
Instructions:
- Kabobs:
- Assemble kabobs with chicken, red onion, bell pepper, and pineapple.
- Chicken Marinade:
- In a bowl, combine ketchup, brown sugar, soy sauce, pineapple juice, ACV, ginger, and oil.
- Marinade chicken in the mixture, reserving some for brushing while grilling.
- Rice:
- Sauté garlic and bell peppers until tender/crisp. Set aside.
- In the same pan, add oil and cold cooked rice; heat through.
- Push rice aside, crack in eggs, scramble, and then add back ham, peppers, and diced pineapple.
- Pour in the sauce mix (soy sauce, sesame oil, hot sauce), and combine.
- Bacon-Wrapped Pineapple:
- Wrap canned pineapple in bacon strips.
- Dip in brown sugar.
- Grilling:
- Grill the chicken kabobs, brushing with the reserved marinade until cooked.
- Bacon-Wrapped Pineapple:
- Bake or grill until bacon is crispy.
- Rice:
- Ensure all ingredients in the rice dish are heated through and well combined.
- Drink:
- Mix Malibu, coconut cream, lime juice, and rose’s lime juice for a refreshing tropical drink.
