Poor Man's Gravy SOS recipe

Ingredients:
- 2 tbsp butter
- Flour
- Water
- Milk
- Sliced corned beef, cut into slices (e.g., 1 package of Buddig)
- Salt and pepper, to taste
Instructions:
- Melt the butter in a frying pan over medium-high heat.
- Add enough flour to absorb into the butter. Stir constantly with a spatula or whisk until the mixture barely starts to darken in color. This step helps "toast" the rawness out of the flour, enhancing the flavor.
- Add approximately 2 cups of water. Whisk or stir rapidly with a spatula to ensure there are no lumps, constantly scraping the bottom of the pan. The mixture will boil up quickly.
- If any lumps form, mash them down and continue stirring until the mixture becomes smooth.
- Cook until the mixture reduces by about a third, then add around half a cup of milk.
- Add the sliced corned beef to the gravy.
- Keep stirring and cooking until the gravy reaches the desired thickness.
- Season with salt and pepper to taste.
- Serve the SOS gravy over biscuits, bread, or mashed potatoes.
