Experience the mouthwatering tradition of Nannie Polly's fried squash! This cherished recipe has stood the test of time since I first shared it in 2014. When the bountiful summer squash harvest arrived, Nannie would fry it up night after night, making it a beloved family staple. Even Daddy couldn't resist its tempting allure, frying up the squash that Papa would send home with him. Ah, the anticipation of visiting Nannie and Papa's house, where I would immediately check the oven for that delightful saucer of leftover squash. Daddy's version was good, no doubt, but Nannie's always had that extra touch of perfection. Picture a plate filled with golden-fried squash, accompanied by her tantalizing fried okra, creamy fresh corn, and a hot, buttered biscuit. A meal like this was pure bliss, a testament to the abundance of summertime vegetables. Who needs meat when your plate overflows with such flavorsome satisfaction?

Southern Fried Squash Recipe:

Ingredients:

  • 2-3 yellow squash
  • 1/2 cup flour
  • 1/2 cup cornmeal
  • 1 tsp salt
  • 1 tsp black pepper
  • 1 small onion, thinly sliced
  • 2 tbsp vegetable oil (possibly more)
  • 2 tbsp unsalted butter

Instructions:

  1. Wash the squash and slice it into 1/4" slices.
  2. Place the sliced squash in a bowl of water.
  3. In a separate bowl, combine flour, cornmeal, salt, and black pepper.
  4. Heat the vegetable oil and butter in a heavy-bottom skillet.
  5. Dredge the wet squash slices in the flour mixture, then place them in the skillet. It's okay if they overlap.
  6. Sprinkle the raw onion slices on top of the squash.
  7. Start cooking the squash over medium-high heat until it begins to crisp on the bottom.
  8. Reduce the heat to medium and stir the squash often to prevent burning. You may need to add a little more oil to the pan.
  9. Note that the flour breading may come off some of the squash, but that's part of the deliciousness.
  10. The breading will crisp up in the pan while the squash remains tender, which takes about 15 minutes.
  11. Once cooked, savor the wonderful combination of flavors.
