Old Fashioned Potato Soup Recipe:

Ingredients:

  • 4 heaping cups of bite-sized chopped potatoes (russet)
  • 1/2 cup chopped onion
  • 1 rib celery, diced
  • 3 cups water
  • 3 chicken bouillon cubes
  • 1 cup milk
  • 1 tablespoon butter
  • Salt and pepper to taste

Instructions:

  1. In a pot, add the first 5 ingredients: chopped potatoes, chopped onion, diced celery, water, and chicken bouillon cubes.
  2. Cover the pot and bring the mixture to a boil.
  3. Reduce the heat to medium and cook for 20 minutes, stirring often to prevent the potatoes from sticking.
  4. Once the potatoes are tender, remove the lid and add the milk and butter to the pot.
  5. Cook the soup for an additional 5 minutes, uncovered.
  6. Before serving, season the soup with salt and pepper to taste.
