Butter Pecan Cookies
Ingredients:
- 1 cup pecans, chopped
- 7 tbsp unsalted butter
- 1/3 cup granulated sugar
- 1 cup brown sugar
- 2 eggs
- 1 tbsp pure vanilla extract
- 2 cups all-purpose flour
- 1/2 tsp baking soda
- a pinch of salt
- Pecan halves for the top of each cookie
Directions:
- Preheat the oven to 350ºF (175ºC) and line 2 baking sheets with parchment paper.
- In a mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer until light and creamy.
- Add the eggs and vanilla extract to the mixture, and beat again for an additional 2 minutes.
- Immediately add the flour, baking soda, and salt, and mix until just combined.
- Scoop balls of dough using a medium cookie scoop onto the prepared baking sheets. Place a pecan half on top of each cookie.
- Bake the cookies in the preheated oven until golden brown, about 10 to 15 minutes.
- Remove the baking sheets from the oven and let the cookies cool on a wire rack.
