Butter Pecan Cookies

Butter Pecan Cookies

Ingredients:

  • 1 cup pecans, chopped
  • 7 tbsp unsalted butter
  • 1/3 cup granulated sugar
  • 1 cup brown sugar
  • 2 eggs
  • 1 tbsp pure vanilla extract
  • 2 cups all-purpose flour
  • 1/2 tsp baking soda
  • a pinch of salt
  • Pecan halves for the top of each cookie

Directions:

  1. Preheat the oven to 350ºF (175ºC) and line 2 baking sheets with parchment paper.
  2. In a mixing bowl, beat the butter, granulated sugar, and brown sugar with an electric mixer until light and creamy.
  3. Add the eggs and vanilla extract to the mixture, and beat again for an additional 2 minutes.
  4. Immediately add the flour, baking soda, and salt, and mix until just combined.
  5. Scoop balls of dough using a medium cookie scoop onto the prepared baking sheets. Place a pecan half on top of each cookie.
  6. Bake the cookies in the preheated oven until golden brown, about 10 to 15 minutes.
  7. Remove the baking sheets from the oven and let the cookies cool on a wire rack.
