Peach Pie and Cheesy Cheese Steak Hoagie recipes

Another busy day. Did some cleaning, baked a peach pie early this morning, I'd made the crust yesterday and I went and treated myself to a new tat today. It was a good day. So had an easy supper again.

Recipe for Peach Pie:

Ingredients:

  • 5 cups sliced peeled peaches
  • 2 tablespoons lemon juice
  • 1/2 cup all-purpose flour
  • 1 cup sugar
  • 1/2 teaspoon cinnamon
  • 1/2 teaspoon nutmeg
  • 1/4 teaspoon salt
  • 2 tablespoons butter

Instructions:

  1. Preheat the oven to 450°.
  2. Place the bottom crust in a pie plate.
  3. Sprinkle the peach slices with lemon juice and gently stir.
  4. In a separate bowl, mix flour, sugar, salt, cinnamon, and nutmeg.
  5. Pour the flour mixture over the peaches and mix gently.
  6. Pour the peach mixture into the pie crust and dot with butter.
  7. Place the top crust on and seal the edges well.
  8. Brush the top crust with a beaten egg.
  9. Cut slots in the crust for steam to escape.
  10. Bake for 10 minutes, then reduce the heat to 350° and bake for another 30-35 minutes.
  11. If the edges start to brown too fast, cover them with aluminum foil.
  12. Serve and enjoy!

Crust Recipe:

Ingredients:

  • 3 cups all-purpose flour
  • 1 teaspoon salt
  • 1 1/2 cups shortening
  • 3/4 cup cold water

Instructions:

  1. Combine flour and salt in a large bowl.
  2. Cut in shortening until it resembles coarse crumbs.
  3. Stir in water until the mixture forms a ball.
  4. Divide the dough in half and shape into balls.
  5. Wrap the dough balls in plastic and chill in the refrigerator for 4 hours or longer.
  6. Roll out the dough on a floured counter, being careful not to overwork it.
  7. Use the crust for your peach pie filling.
  8. Enjoy the flaky crust!

Cheese Steak Hoagie:

Ingredients:

  • Sautéed peppers and onions
  • Swiss and Gruyére cheese
  • Steamed bun

Instructions:

  1. Prepare sautéed peppers and onions.
  2. Melt Swiss and Gruyére cheese on the sautéed peppers and onions.
  3. Place the cheesy peppers and onions mixture on a steamed bun.
  4. Enjoy the delicious cheese steak hoagie!
