Supper tonight in southeast ky consists of homemade  fried chicken, mashed potatoes, creamed sweet and spicy corn, and a fresh pone of corn bread

Southern Fried Chicken

Ingredients:

6 chicken breast or a whole cut up chicken
2 cups of flour
1 cup of butter milk
2 teaspoon of onion powder
2 teaspoon of Garlic powder
2 teaspoon of Paprika
2 teaspoon of poultry Season
2 teaspoon of salt
1 teaspoon of pepper
Cooking oil

Directions:

Wash chicken
In a large bowl
Add half of the seasonings
in buttermilk, wisk until mixed well. Place chicken in buttermilk mixture coating chicken all over. Let it set for a couple of hours in refrigerator, or overnight.
Heat a large skillet about 1/4 full of cooking oil on med heat
Add remaining seasonings to the flour. Mix it well.
Then place a piece of chicken in flour until coated well, place floured chicken in a large skillet of hot oil, repeat until all of the chicken is in the pan. Brown on both sides, reduce heat to low, then put a lid on the chicken and cook until done. Remove lid, turn up heat to med, finish up the browning.

My Cornbread recipe

Ingredients:

3/4 cup of all purpose flour
3/4 cup of yellow cornmeal (it's okay to use white cornmeal -- I prefer yellow)
1 tsp. salt
2 tsp. baking powder
1 tsp. baking soda
1/4 cup of butter, MELTED
1 large egg
1 1/4 cup of milk
3 tbsp. bacon grease

Directions:

You will need a cast iron skillet. Heat the oven to 400 degrees. Put the 3 tbsps of bacon grease in the skillet or pan and put it in the oven while you make the batter. (Watch that it doesn't start smoking.)
In a large bowl, add the flour, cornmeal, salt, baking powder, baking soda. Mix with a whisk.
Melt the 1/4 c butter in the microwave in a large bowl. When it's melted, add the egg, and the milk and stir together till combined.
Pour the wet ingredients into the dry ingredients and stir till combined.
Take the skillet out of the oven CAREFULLY. The grease will be very hot. Pour the batter into the pan. The hot grease will come up over the top of the batter.....take a spoon and sort of spread the it over the batter. This is what makes the cornbread crisp on the outside.
Bake for 18-20 minutes in the oven set at 400 degrees.
This is the best cornbread I have ever eaten except that made by my first mother in law.
If you want it sweeter add a tbsp of sugar.
